Organic, single-origin hard red wheat berries, grown by Pleasant Grove Farms in Pleasant Grove, California. With a rich, robust flavor, this is our family’s bread wheat of choice for milling into hearty sourdough and rustic artisan loaves. The berries may also be cooked whole or cracked for hot cereal. As a single-origin grain, their flavor, protein content and baking character will naturally vary from season to season. Whole and unmilled.

Baker’s note: When milled, this season’s crop is lively in fermentation but delicate in structure—a handling style that may feel familiar to bakers who work with spelt. Used on its own, it produces a hearty loaf with a naturally more closed crumb. For a lighter, airier crumb, blend with our higher-protein Hard White wheat berries. We recommend beginning with 75% Pleasant Grove and 25% higher-protein berries.
