Organic Durum Flour

Organic durum flour, freshly milled and your go-to for all things pasta, lasagna, ravioli! This wheat is one of the exceptions to our one-pass practice. Known for being one of the hardest grains to process, we pre-freeze these berries before passing them through once, coarsely cracking the grain. We send it through a second pass, this time much finer but with that classic bit of sandy, semolina texture. Still wanting silkier? Select sifted at checkout, or sift at home before use.
